Classification
Sodium bicarbonate, chemical formula NaHCO₃, commonly known as baking soda. It is a fine white crystal, and its solubility in water is less than that of sodium carbonate. It is also a kind of industrial chemicals, solid 50 ℃ above the beginning of the gradual decomposition of the generation of sodium carbonate, carbon dioxide and water, 270 ℃ when the complete decomposition.
Sodium bicarbonate is an acid salt produced by neutralizing a strong base with a weak acid, and is weakly alkaline when dissolved in water. This property allows it to be used as a bulking agent in food preparation. Sodium bicarbonate leaves a residual sodium carbonate after its action, and using too much of it may give the finished product an alkaline flavor.
